Cranberry Nut Bread

While I’m not a huge fan of banana bread – meh – or even pumpkin bread, for that matter, I happen to lurve cranberry bread. I especially lurve cranberry orange bread. With nuts, please. As you know, cranberries are plentiful around here these days so the other day I made a Cranberry Nut Bread.

 Cranberry Nut Bread

Ingredients:

2 cups flour
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange juice
1 tablespoon grated orange peel
2 tablespoons shortening
1 egg, well beaten
1 1/2 cups cranberries, coarsely chopped
1/2 cup chopped nuts

Directions:

Preheat oven to 350ºF. Grease a 9 x 5-inch loaf pan.

Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in orange juice, orange peel, shortening and egg. Mix until well blended. Stir in cranberries and nuts. Spread evenly in loaf pan.

Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack for 15 minutes. Remove from pan; cool completely.

I have to say – I didn’t have any orange juice but I did have oranges so I squeezed them and used fresh orange juice and I can’t believe the difference that made. So much orange-y flavor! I’m going to use fresh orange juice from now on.

And now – go forth! Make cranberry nut bread!

    Mmmm, that sounds delicious! My family isn’t crazy about cranberry bread, but I love it … they are more into the pumpkin bread and zucchini bread – perhaps I will make those this weekend!

    I knew there was something I liked about you lol. We are in a small cohort who do not especially like banana bread. The cranberry bread with the organge sounds great–it may be my new cranberry bread recipe. Years ago, I made an apricot nut bread which I loved and have lost the recipe. Maybe your recipe would also be good with chopped apricots. Can’t wait to get baking!

    Mmmm. My Orange Cranberry bread uses the zest, too. Why have I never thought to put nuts in this delight? Oh, because I live with Mr. No Nuts Please. I seem to recall my recipe making two loaves. I see one of those having nuts in them next time. Thanks for the idea. Now, what kind of nuts?

    Forty-three years ago, when I married my husband, one of the things his mother made that I HAD to get the recipe for was Cranberry Nut Bread. This is the same recipe I use, and every year Cranberry Nut Bread is always in the house as soon as the fresh cranberries appear at Market Basket in the early fall.

    Yummy. My cranberry sauce at Thanksgiving has fresh orange juice and zest in it. It pairs beautifully with cranberries.

    Sadly I haven’t been able to get even frozen cranberries here in South Australia. I’m wondering if dried would work as well?
