Three On Thursday

Today, because it’s September and we all know that September is the unofficial new year and today, because it’s Thursday, I’ve got 3 things I’m recommitting myself to starting this week.

  1. Meal planning. And I don’t just mean dinner but also breakfast (which I often eat after I get to work) and lunch, too. I need to get back in the habit of hard boiling eggs and keeping them in the fridge. I also need to make overnight oats again on a regular basis. Dinner isn’t a struggle for me but lunch is tricky and I’m open to suggestions for easy, healthy lunches that I can make on the weekend and eat all week long.
  2. Exercising. Summer put a real wrench in my Peloton riding. First of all, it was hot and humid and we don’t have AC in the room where the bike is. And second of all, Dale was home and that one little detail changed my whole morning routine. Now that he is back to work and the days are (hopefully) becoming less humid, I plan on riding before work again.
  3. Writing. I gave myself permission to not write all summer and it was nice to not have it hanging over my head. I’m tempted to continue with the not writing but I know, deep in my soul, that I am a writer and therefore I need to write. I’ll be starting up with journaling again and I’m also going to try and outline the memoir idea that’s been bouncing around in my head for ages.

  1. We don’t have kids, and I’m absolutely a fall is a fresh start person. Although, I haven’t felt that yet this year. I’m not sure if it’s dreading another pandemic winter or other big things that have been taking up a lot of mental space. Thanks for reminding me.

    I have a wide embrace for breakfast and am not above making a large sandwich that I cut into whatever ratio feels right and eat part for breakfast, part for lunch. Simplifies my whole day and cuts down on snacking because real food.

  2. For my lunches I make a caesar salad and pack crackers and cheese sticks with it. I have two of these lunch cubes (https://www.amazon.com/gp/product/B002B4S75I/ref=ox_sc_act_title_1?smid=A2RFWVQCPQZM4D&psc=1) and I put the salad in the big compartment. Every night I have a cup of chamomile tea, so while the kettle is heating I tear up my romaine, sprinkle on parmesan, and then add some cheese sticks and trader joe’s sweet potato crackers in the smaller compartment, and that works really well for me.

  3. Fall is such a great time to change things up — and jumpstart habits that have been put aside for the summer. (Which is totally valid and not a bad thing at all!) (Did you know that I . . . never eat breakfast at all???? My first meal of the day is usually a late lunch. And I have too many suggestions about lunch for a blog comment.) XO

  4. Meal planning… sometimes I’m really great with that, and other times not. Like Kym, I’m not much of a breakfast eater, though lately I’ve been picking up a (probably not the best) flax bar on my morning coffee shop stop. Lunches are very often leftovers from the night before — sometimes that’s really great, and sometimes not. I used to get delivery (subs, Panera) more often but not since delivery prices have gone through the roof, plus a tip — $11 for a sub sandwich is a little ridiculous. If all else fails and I’m desperate, I usually have a couple of items in my bottom drawer — tuna, green beans, peanut butter, some crackers. I like Kat’s salad idea (why do I have such a block about putting together a quick salad? It can’t be easier these days!).

  5. As I have said many times in the comments, autumn is my favorite time of year. I love the cooler temps and humidity, although I feel very weighed down by all that is going on this year. My lunches are generally based on the Blue Zones, so lots of greens, beans, and vegetables. Not very exciting, I know. I’m glad you feel renewed with the new season!

  6. Even though I’m not in school anymore, I always feel like the start of the school year is a fresh and exciting time of year — probably helped along by my love of school supplies!

    My lunch most days is an Israeli salad — chopped/diced cucumber, tomato, and bell pepper (one of each) tossed in a little balsamic vinaigrette. When I was going into the office, I’d typically chop enough for two lunches so that I only had to make lunch every other day. Sometimes I’ll jazz it up with a little feta cheese, making it more of a Greek chopped salad, or cube up some slightly stale crusty bread, making it a panzanella salad.

  7. Cheers to Autumn!! I started a new-to-me guided journal this morning – it runs for a year and is broken down by season. I got it in January and this is the first “new” season since that I’ve felt the energy to try something new. Sara and I made this Smitten Kitchen salad https://smittenkitchen.com/2007/03/mediterranean-eggplant-barley-salad/ for dinner last weekend and she’s been eating the leftovers for lunch all week. We left out the onion (both kinds) and cut the cheese WAY back … it’s really tasty.

  8. Regarding meal planning – cook extra at dinner and save a portion for breakfast. Breakfast doesn’t have to be cereal or eggs. For lunches, google “salad in a mason jar” for a bunch of ideas. Essentially, you fill 4 or 5 mason jars with greens, proteins, goodies, whatevers; pack sides of salad dressings for portion control. Do it on Sunday and lunches are done for the week. Also, if you like the mason jar idea, google “mason jar lunch bag pattern” for various sewing patterns that accommodate the jars; even Etsy has had them all made and available for purchase. You can make soups and portion them into the mason jars. If you get the straight-sided mason jars, you can freeze the soup in the jar. Again, google it for details. Lastly, if you don’t have an Instant Pot, I’d suggest you buy one. They are great for making soups, hard boiled eggs, chicken for salads. I love mine! And, no, I don’t work for Mason Jars or Instant Pot! lol

  9. I hear you about that meal planning hurdle…oy. Lunches are typically a salad here. But sometimes I make chicken salad or tuna salad and make a ‘melt’ out of it on an English muffin with a bit of cheese on top.

    I say good riddance to the humidity…I am just so over it!

  10. Meal planning is a bit of a roller coaster for me. I eat breakfast and lunch at work so try to stick to healthy, but it doesn’t always work.
