Peanut Butter Balls

There are treats I only make at Christmas time and Peanut Butter Balls are one of them. Even though everyone loves to eat them, well, they are kind of a pain in the ass to make. This year, though, Hannah helped me and they worked up very quickly. I think this is probably a recipe that everyone has already since it’s an oldie (my mom made them when I was a kid and I think I’ve had them as part of Christmas for about 40 years now) but it’s also a goodie so I’m going to share it here.

Plus, it gives me an excuse to show you how I made them extra pretty this year.

Peanut Butter Balls

3 cups Rice Krispies
3 1/2 cups of powdered sugar
2 cups of peanut butter
1 stick of melted butter.

Combine all of the above ingredients. I find the easiest way is to mix the cereal, powdered sugar and peanut butter together and then slowly add the melted butter. I do all of this in my stand mixer and it goes together pretty quickly – plus the mixer crushes the cereal a bit and that’s a good thing.

Once the ingredients are all mixed then form the mixture into small balls. I use my smallest scoop, I think it’s a teaspoon size, to make the balls quickly and then I roll them with my hands to make them smooth.

Melt 2 cups (or more if necessary) of chocolate chips in the top of a double boiler. I also thin the chocolate with a bit of shortening to make it more . . . dippable. And yes, that is so a word. Dip each peanut butter ball completely in the chocolate and put on a waxed paper lined baking sheet to set up.

Once the chocolate has set you can melt some white chocolate and then drizzle it over the top. I did this by putting it in a small sandwich bag and then making a teeny tiny snip in one corner. Then I just went back and forth over the rows with the white chocolate and then I sprinkled them with green sugar. This little extra effort really makes them look Christmas-y and special for the season.

Weekending

I had a fun and full weekend . . . of cooking and baking and Christmas prepping. Of course, a good blogger would have photos of all of that but I’m here to admit that I’m not a good blogger (especially when you consider that I forgot [after nearly 17 years of blogging] to post on Friday. That photo above? It’s from several years ago. Just sayin.

Doreen and I made 2 batches of peanut butter balls (that’s about 12 dozen if you’re adding things up), plus 3 dozen cherry chocolate kisses, 6 dozen spritz, and 8 dozen ginger cookies. At home and on my own, I made 2 dozen peppermint mocha cookies, two pounds of salted chocolate toffee, and six loaves of Swedish rye bread.

In between all of that, Dale and I watched Love Actually, some football, and went out looking at Christmas lights. We also made a major decision about our Christmas Eve gathering . . . it’s not happening. It’s heartbreaking and frustrating to feel like we can’t have a house full of friends but given rising cases in our area plus the new variant, it just doesn’t seem like a smart thing to do. We will have our kids over and keep things small in (pardon the use of this over-used expression) an abundance of caution.

Sometimes being a responsible adult really blows.

Anyway.

I’m cheering myself up by focusing on my greatly shortened to-do list and the happiness I feel when delivering cookies and treats to the people who make my life easier at work and in my community. I’m hoping for plenty of smiles as I make my rounds.

Three On Thursday

Today I’m doing something I haven’t done since 2018 . . . I’m baking Christmas cookies with my friend Doreen at her house! This has been an annual tradition of ours for many years but in 2019 Randy had just died so Doreen came to my house and in 2020 there was COVID. And yes, there is still COVID in 2021 but Doreen and I are both vaccinated and boosted and we are doing it!

When it comes to baking cookies together there are some that are always at the top of the list. There are three and they are:

December Weekending

Even with COVID, we are making merry over here. This past weekend we . . .

Made cookies and candy. Spritz, pictured here, but also ginger cookies and lemon crinkles, peanut butter balls and toffee. Usually I’d be doing this with Doreen but we decided that wasn’t a good idea so I made cookies on my own. Funny thing, it went faster . . . but it wasn’t nearly as fun.

On Saturday night we watched A Christmas Carol, the version with George C. Scott. It’s our favorite and we always save it to watch right before Christmas. This year we got sushi and I dubbed the evening Sushi & Scrooge. I hope this is a tradition that will stick.

And on Sunday we made krumkake, a new tradition for us. I invested in a krumkake iron a couple of weeks ago, thinking it would be a good way to spend some pandemic time together. I was right! While it took longer than I anticipated, Dale stood at the stove with that krumkake iron until all those cookies were done. They are light and crispy and pretty tasty!

It feels good to do some of these traditional things, even as we’re missing looking forward to our annual Christmas Eve Open House. In the interest of full disclosure, I will say I’m not missing (at all) the thought of making 8 lbs of Swedish meatballs . . . or any of the other food, really . . . but I am missing the thought of the people we love most gathered in our home to celebrate, singing and laughing, eating, and drinking, exchanging gifts and hugs, and just being together.

Some day that will happen again but in the meantime I am embracing this season of quiet and peace and reflection.
