In keeping with the tradition of the last few years, on the Saturday after Thanksgiving we will be having a turkey dinner with our kids. We call this tradition Thanksmas because it falls in between the holidays. Sometimes the house is still decorated for Thanksgiving and sometimes the Christmas decorations are up and sometimes it’s a mix of the two.
Because it’s not actually Thanksgiving day, I can play with the menu a bit. One thing that’s non-negotiable, though, is turkey, stuffing, mashed potatoes and gravy. And, to keep the actual day as easy and stress free as possible, I make the gravy in advance. So, yesterday, I roasted turkey wings in the oven and then simmered them on the stove to make turkey stock. My house smelled amazing and now I have beautiful, rich stock ready for homemade gravy.
