Chicken Pot Pies
Several of you expressed interest in the mini chicken pot pies I made for our Sunday dinner so today I am sharing the recipe (not mine) and the photos (mine but not great).
The recipe is from The Girl on Bloor and you can find it here. And the small ramekins I used can be found here. I will say that when those arrived they were smaller than I expected and didn’t seem like they would hold a lot of filling. I was wrong and they are perfect for making 4 mini chicken pot pies. And the serving size is just right, too.
We had 2 on Sunday night and I reheated the other two last night. They reheated perfectly and the puff pastry stayed crispy but wasn’t overcooked. I prepared the chicken in the Instant Pot and that could be done in advance to save time. I did adjust the amount of chicken broth and replaced about 1/2 cup with milk for a creamier gravy but other than that I followed the recipe exactly. I served them with mashed potatoes but I think they would be even better with a green salad.
I try new things pretty regularly and some are keepers and some are not. This one is definitely a keeper and when Dale was eating it last night he said, please make this again any time!
