Chicken Pot Pies

  • Food

Several of you expressed interest in the mini chicken pot pies I made for our Sunday dinner so today I am sharing the recipe (not mine) and the photos (mine but not great).

The recipe is from The Girl on Bloor and you can find it here. And the small ramekins I used can be found here. I will say that when those arrived they were smaller than I expected and didn’t seem like they would hold a lot of filling. I was wrong and they are perfect for making 4 mini chicken pot pies. And the serving size is just right, too.

We had 2 on Sunday night and I reheated the other two last night. They reheated perfectly and the puff pastry stayed crispy but wasn’t overcooked. I prepared the chicken in the Instant Pot and that could be done in advance to save time. I did adjust the amount of chicken broth and replaced about 1/2 cup with milk for a creamier gravy but other than that I followed the recipe exactly. I served them with mashed potatoes but I think they would be even better with a green salad.

I try new things pretty regularly and some are keepers and some are not. This one is definitely a keeper and when Dale was eating it last night he said, please make this again any time!

That right there is all the endorsement you need, friends.

  1. Thanks for sharing. I think these would be a great place to use rotisserie or leftover chicken, too.

  2. I am not generally a fan of the pot pie, in general. But that looks really tasty, Carole! Thanks for sharing the recipe. XO

  4. YAY!! I do love a pot pie any day of the week and these look yummy and easy to make. Will definitely be trying these soon! Thanks for sharing the links.

  5. Thank you, Carole. These look delicious, and I love pot pies. I may make some of them without the puff pastry and freeze them for the future. Yes, it is so fulfilling to have someone you cook for say, “make it again”. It’s the best kind of compliment.

  6. They look delicious and fancy! I’m filing this recipe away to make for my father-in-law, who loves chicken pot pie.
