Snickerdoodle Squares

Do you like Snickerdoodle cookies?  I do.  Very much.  But I do not like making them.  All that rolling into balls and then all that rolling around in cinnamon and sugar.  They take forever to make.

Well stick around because I have a solution to the Snickerdoodle love problem.  Make these Snickerdoodle Blondies instead.

You just press the dough into a 9×13 pan, sprinkle some cinnamon and sugar on top and pop them in the oven.  They taste just like the cookies.  Maybe even better.  Definitely easier.

  2. My biggest problem with them was that (at least with my recipe) the dough needed to be chilled for several hours or overnight. When I’d get a hankering for them, I wanted them NOW, not tomorrow.

    Sadly, though, Larry doesn’t care for them, so I don’t make them at all any more. Maybe I’ll try making these when I’m going to a pot-luck thing.

  3. Heh. That’s my solution to chocolate chip cookies — press the dough into a pan and have bars (barss, here in the Scandinavian Midwest).

  4. Oh, yum!!! I love snickerdoodles, so these should be awesome. I think I will make some on Tuesday. My youngest is graduating from college next Thursday, and rather than getting several hotel rooms for my parents and sister, etc, we have rented a townhouse in Ocean City (at the beach in Maryland)which is only a half hour away from the school. His girlfriend’s family has rented the townhouse next to ours, and Thursday night we will hold a joint blowout dinner for the two of them, both families and their friends. I think these would be an awesome addition to the feast!

  6. Oddly, I’ve never been crazy for the cookies, but I could have eaten the whole bag of bars. Notice that I did manage a modicum of self-control.

  7. Yum! My grandmother (the one who called me JessaLu) used to make snickerdoodle cookies with me so they remind me of my childhood. :o)

  9. That looks like a great recipe. Remind me of how lazy I am with biscuits. I used to cut them out in nice circles, then I went to squares, then I discovered drop biscuits. Lazy baking is my favorite.
