Avocado Feta Salsa

Last month at a potluck a friend brought this delicious dip. I thought it was guacamole, but it wasn’t. Then I thought it was salsa, but it wasn’t that either. On my 3rd try I decided it was some kind of Greek dip. In the end I just decided it was delicious and asked my friend for the recipe. And now I’m sharing it with all of you. I’m good like that.

Avocado Feta Salsa

2 plum tomatoes, chopped
1 ripe avocado, peeled pitted and chopped
1/4 cup finely chopped red onion
1 clove garlic, minced
1 T snipped fresh parsley
1 T chopped fresh oregano
1 T olive oil
1 T red wine vinegar
4 oz crumbled feta cheese

In a bowl gently stire together tomatoes & onion and garlic. Mix in parsley and oregano. Gently stir in olive oil and vinegar then stir in feta. Cover and chill. Add avocado just before serving as it will brown if cut too soon. Serve with tortilla chips.

My friend said she doubles it for a large crowd. I doubled it and my crowd was 5 adults and it was gone in a flash so I wouldn’t even bother making it without doubling it. Just sayin.
