Soft Ginger Cookies
I feel just terrible that I didn’t give you a link to my recipe for Soft Ginger Cookies last week. So terrible that I’m posting it for you today, giving this wonderful cookie it’s very own post.
Soft Ginger Cookies
Cream in mixer:
2 cups sugar
1 cup shortening
2 eggs
1/2 cup molassesThen add:
4 cups flour
4 tsp baking soda
1 tsp salt
2 tsp each clove, ginger & cinnamonRoll into small balls and roll in sugar. Flatten slightly with a glass. Bake at 350° for 10-12 minutes. Makes about 8 dozen cookies.
The recipe originally came from the Now Ur Cooking listserve on quiltropolis and I printed it out in January of 1999. That’s a loooooong time ago and I’ve been making these cookies regularly ever since. Now you can, too!

There is a weakness for ginger/molasses cookies in my house. I have a similar recipe. I may have to try both!
