Soft Ginger Cookies

I feel just terrible that I didn’t give you a link to my recipe for Soft Ginger Cookies last week. So terrible that I’m posting it for you today, giving this wonderful cookie it’s very own post.

Ginger Cookies for Carole Knits

Soft Ginger Cookies

Cream in mixer:
2 cups sugar
1 cup shortening
2 eggs
1/2 cup molasses

Then add:
4 cups flour
4 tsp baking soda
1 tsp salt
2 tsp each clove, ginger & cinnamon

Roll into small balls and roll in sugar. Flatten slightly with a glass. Bake at 350° for 10-12 minutes. Makes about 8 dozen cookies.

The recipe originally came from the Now Ur Cooking listserve on quiltropolis and I printed it out in January of 1999. That’s a loooooong time ago and I’ve been making these cookies regularly ever since. Now you can, too!

  2. Thanks, and those beautiful cookies look exactly like the cookies my sister and I made on Saturday. They are delicious! I wasn’t reading the recipe, I was creaming and mixing and she was measuring and sifting.
