Comfort Food

As I may have mentioned a time or two, I take great comfort in serving delicious food to my family and friends. While this may account for my current XL size, there’s no reason why you shouldn’t benefit from my extensive research in this area. So, allow me to show you what we had for dinner on Monday night.

Chicken Tomato Stroganoff

2 lbs boneless chicken breast cut into bite-sized pieces
1 lb mushrooms, sliced
2 cans Cream of Mushroom Soup
2 cans stewed tomatoes
salt, pepper, basil to taste
1 lb cooked pasta
8 oz shredded mozzarella cheese

Brown chicken and mushrooms in olive oil. Stir in soup, stewed tomatoes, salt, pepper and basil. Bring to a boil and then mix with the cooked pasta. Pour into a casserole dish and top with mozzarella cheese. Bake at 350° for 30 minutes.

Simple and certainly not fancy but very, very good. Maryse, you really missed out.

  1. Oh, that looks delicious. I’m going to make that for my family as soon as everyone’s tummy settles down.

  2. OH MY…looks delicious, I think I can smell it! I enjoy food…really good food! I’ll be fixin’ this one this weekend!
    Thanks!!

  3. It’s so funny. I’m a relative food snob. However, I also believe that you can dump a can of Cream of Mushroom soup over an old boot, bake it half an hour at 350, and it would be delicious.

  4. hehe Right! A regular MFS! hehe Carole, the simple + yummy = the BEST in my book every time! Yay! Thanks for another great dish!

  5. Looks delicious, yet simple. I’ve copied and printed the recipe and I think I’ll make it for dinner tonight (since I forgot to take anything out and have to go to the store anyway)!

  6. Now I’m hungry. I really should save your blog for closer to lunch time. *L*

Thank you for a recipe that the single and bitter can half! /runs

  7. Wow that looks good! And fast! I’m going to the grocery store right after work! Thanks for sharing!!

  8. That looks SO good! I think my husband would really like that although I’m sure I shouldn’t eat it since I’m also feeling a bit XL right now!

I’m going to print out the recipe anyway. I could always use it on a “splurge” day.

  9. Never trust a skinny cook!

We’re having homeade chicken tortilla soup tonight. Despite the fact that it’s 80F here, soup sounds good.

Saturday night I’m planning seared tuna with a wasabi pea crust, bok choy, and rice pilaf with a nice Spanish albarino.

I love cooking. I love cooking even more than I love knitting! (Yes, heresy in this crowd, but true nonetheless.)

  10. Can I come to your house? There’s a flower show in Portland (ME) Th, F, sat and Sun…too far for you? I was there today and all day tomorrow.

  11. I’m collecting recipes to make for a friend for after her 4th baby is delivered, do you have any suggestions for freezing this and then baking/re-heating it?
